Mexican Salad


Delicious and Nutricious!

(4 servings as a main with potatoes or as a side - around 300 calories/portion)

Ingredients:

a trio of Peppers (Red, Green, Yellow)

1 tin of Sweetcorn (291g)

1 tin Red Kidney Beans (244g in a tin)

1 tin Black Beans (266g in a tin)

214g cherry tomatoes

37g spring onions (3 stalks)

100g Kale

80g celery (3 stalks)

1.5 tbs hot pepper sauce (Encona - Jamaican sauce)

1 lime (15ml)

2 pinches of salt

3 small cloves of Garlic

How to make it?

Mixed all the ingredients together but the Kale which is blanched and sauté dry with a bit of soya sauce

Can be served with:

Great when served with new potatoes
